What's New

It's been a while, so how about a quick round up? I

- Geoff and I moved closer to the city, into a wonderful 2 bedroom loft. We're still in a suburb, but on a quaint little downtown street on the western edge of Chicago. Best part? We're finally along an L line, so getting downtown is super easy and cheap. My commute is a little further, but it's worth it to be able to walk to literally everything else we want to do. We've been here almost two months and it's feeling like home.

 
 
- Not too long ago, Geoff found out he got a great new job just north of us, which means our new apartment is in a perfect location- exactly halfway between our two jobs. I think the next year will be a great one. We're both finally graduated, employed, and living together in a place we love. Can't beat that. :)

 

-My other favorite guy also had a big life change. My dad got married and also has a beautiful, woodsy new home in Wisconsin.


-In less life-changing news, I traded in my iPad for a Microsoft Surface 2, which was a great deal at the Microsoft store. I'm hoping it will make blogging on the go (or from the couch) easier, as it's got much better multitasking and productivity functionality (connecting my camera via USB? Sold.). I'm typing on the Touch Cover keyboard right now and so far, so good. I also like that it doesn't feel as "precious" as the iPad did, and the Touch Cover wipes clean, so the situation below can happen, and tomatoes can fall on the keyboard without me flinching.



-I read the book "Eating Animals" by Jonathan Foer, and am committing fully to being a vegetarian or, as the Michael Pollan cult might say, "selective omnivore." This has been going on about a month now, and I think that while I'll still eat meat, it will only be meat that's not factory farmed. Since it's difficult to work out what's what in the store, for me that means venison shot by someone I know, fish caught by someone I know, or chickens grown in my dad's backyard.  It's not that big a change, as I rarely eat meat at home anyway.  It's just going out to eat that will take some getting used to.


What's new with you guys? Big (or small) life changes? Any favorite vegetarian meals to share?

  1. idk What the guidelines for your new diet are, but you could also source some meat from local farmers. My parents will often buy beef and pork from farmer friends at church when they butcher. I also think places like Brandon Meat Market slaughter the animals themselves, but idk if you can really verify their living conditions or not.

    Art and I are only about half-veg at home, but mostly because I'm cheap or too lazy to cook meat rather than for ethical reasons. I think if I went full veg I would miss pulled beef tacos the most!

    I am all about quinoa salads lately. I have been mixing quinoa that I have either cooked in broth or an herb flavored water (for more flavor) with beans, tomatoes, other vegs, and then we put that into a quesadilla with cheese and hummus or salsa. Would be good with avocado too. You can refrigerate the "salad" portion and that makes it really quick to whip up this meal in like 10 minutes.

    Also been nomming on steel cut oats (a.k.a. oat groats, heehee) for breakfast. I can cook it in the rice cooker with a timer overnight. Bought some wheat groats too but haven't used them yet. Only thing is that Art doesnt really like it, so it's a lot of oats for one person.
