Recipe for Crackers


I love eating crunchy snacks while I work at my desk, especially in the evening. Growing up, a "crunchy snack" was always a baggie of cereal, pretzels, and anything else tasty that might be in the pantry, sometimes with M&Ms on a lucky day. Now that I'm living on my own, my pantry is far less stocked than at home, so crunchy snacks are a bit sparser. Luckily, I had all the ingredients for making crackers already on hand. I can't wait to make them again!


Recipe for Crackers

2 c flour
1 tsp baking powder
1 tsp salt
2/3 c warm water
1/3 c olive oil
Your choice of seasoning (I used salt and Italian Seasoning- next time I'm going to load up with Parmesan cheese!)

Preheat oven to 400 degrees. Grease 2 cookie sheets.

Combine flour, baking powder, salt, warm water and olive oil, mixing until dough is smooth. Divide mixture in half. Spread each half over a cookie sheet. Use your fingers for non-uniform looking crackers (obviously, that's what I did). If you get lots of holes, don't worry too much- next you'll cut into squares, kind of perforating your dough. As they bake, they will pull apart and shrink away from each other. Brush with olive oil or an egg wash, and sprinkle with seasonings.

Bake for 10-12 minutes or until crispy.
